Sesame Fudge

0.5 cup maple syrup (or more)
0.5 cup sesame seeds (or more)

Bring maple syrup, molasses and salt to a boil, continuously stirring. Meanwhile, lightly toast sesame seeds. you can leave them raw if you like, but it makes for a more chewy fudge. When syrup starts to get thick (6-8 mins) take it off the heat and beat it with a wooden spoon. quickly stir in sesame seeds, then pour into a greased tray or pan. Let cool, then cut into small pieces.

This tastes a lot like fudge and is extremely sweet. Sesame seeds are also quite high in calcium. If you like sesame snaps, you can use the same recipe. Instead of stirring the fudge, cook at a slightly lower temp. and don't stir very much, especially near the end. Wait until it is quite thick, add sesame seeds, stir and pour. Wait til it hardens then break into pieces.
